Prior to the 2025 season, Carroll-Jackson joined the Huskies program and immediately became a starter at defensive tackle, appearing in 11 games for UConn this past season. He would go on to finish the season with 28 total tackles (12 solo), 1.0 tackle for loss, and one forced fumble.
