If you could pluck a player from each Texas opponent, who would you take?

Every year, I do an experiment where I go through Texas' opponents (or just the SEC) and look for one player on each team that I would add to that year's Texas roster. I'll spoil the surprise here and illustrate what I'm talking about: I would take Jeremiah Smith from Ohio State.
